All hail the humble wrap! With the right ingredients, wraps can be such a nutritious on-the-go lunch option. This Jerk Chicken and Hummus Wrap ticks all the boxes. It’s got plenty of veg, a good source of lean protein and plenty of flavour to boot! It’s healthy, wholesome and one of our lunchtime go-tos.

We affectionately call this our “hippie wrap” because we added a big handful of alfalfa sprouts (so retro, right?!) along with the spinach for a good dose of nutrients. However, you can use whatever leafy greens you’d prefer.

Don’t skip the hummus – it binds the ingredients together well and also offers plenty of flavour, fibre and plant-based protein. Just make sure you check the ingredients list: look for chickpeas, tahini, lemon juice, garlic, seasoning and extra virgin olive oil – with little else. Try to avoid the ones that contain sunflower, vegetable or canola oil, these oils are chemically refined and have little nutritional value. Also avoid the usual suspects: sugar and additives.

We use the THR1VE Jerk Chicken for this wrap. It cuts out so much prep time and is cooked in the most delicious spice mix, which packs in extra flavour. Then enjoy the veggies on the side. However, feel free to grill your own chicken breast if you have more time and simply use a pre-made jerk chicken rub. Whatever you choose, enjoy this hearty and healthy “hippie” wrap!

Jerk Chicken & Hummus Wrap

Serves 2

Ingredients

  • 2 wraps
  • 1 small tub hummus
  • 1 large handful baby spinach
  • 1 large handful alfalfa sprouts
  • 1 small jar roasted capsicum
  • 200g grilled cooked chicken breast or 1 x THR1VE Jerk Chicken, heated according to packet instructions
  • 1 lemon
  • Salt and pepper
  • Extra virgin olive oil, if desired

Instructions
To assemble the wraps, spread each wrap with hummus, leaving a small border. Top with spinach, sprouts and a few strips of capsicum. Add chicken, a good squeeze of lemon and salt and pepper, to taste. Add a splash of extra virgin olive oil, if desired (you can omit this if your hummus already has enough olive oil in it). Roll up the wraps and enjoy!
