This delicious, low carb lasagna is constructed with sheets of sweet potato and filled with an array of veggies such as beans, eggplant, peas and pumpkin! 

Heating from fresh:
1. Heat in microwave for 4 minutes on high. Plastic film will expand during heating, this is normal.
2. Let meal stand for 1 minute, remove film.
