This hearty and healthy salad is a great lunchtime go-to! Our veggies are marinated in a delicious curry paste made with chilli, kaffir lime peel, cumin, cinnamon, turmeric, cardamom, nutmeg and more! Once roasted, we toss the carrots, sweet potato, capsicum and cauliflower with quinoa for extra plant protein. Veggie perfection!
